What's the Injera?<\/h2>\n\n\n\n

The injera <\/strong>is a\nkind of large pancake cooked in Ethiopia and Eritrea; it serves as a kind of\nof bread, plate and fork.<\/p>\n\n\n\n

It is made from teff<\/strong>a cereal that grows only on the high plateaus of these two countries, which explains why it cannot be found elsewhere. <\/p>\n\n\n\n

Teff seed, which is gluten-free, has positive effects on health, and is said to be one of the reasons for the performance of Ethiopian runners. This cereal has never been genetically modified.<\/p>\n\n\n\n

The bottom surface of the injera, in contact with the pan, has a smooth texture, while the top surface is honeycombed and porous. The pancake is cooked on one side only.<\/p>\n\n\n\n

What is eaten with Ingera in Ethiopia? <\/h2>\n\n\n\n

The injera wafer is accompanied by\na variety of sauces that are superimposed on it. <\/p>\n\n\n\n

Some sauces are vegetable-based: the Shiro<\/a> (<\/em>chickpeas), the Atkilt Wot (<\/em>carrot, potato and cabbage mix), the Azifa<\/em> (lentils), the Mesir Wot<\/em> (mixture of lentils and a sauce of berber<\/em> spicy), and the Fasolia<\/em> (mixed green beans, carrots and caramelized onions). <\/p>\n\n\n\n

Other sauces are prepared with meat: the Tibs<\/em> (lamb, beef or mutton, the doro wat<\/a><\/em> (chicken and egg) and the Kefto<\/a><\/em> (raw ground meat). <\/p>\n\n\n\n

We taste the dish by cutting with the right hand small pieces of injera, with which we \"wrap\" the sauces, vegetables and meats arranged on the pancake. At the beginning you are a bit clumsy, but helped by the conviviality of the environment, you progress quickly!<\/p>\n\n\n\n
